This recipe is almost fool proof. I actually don’t think it is possible to mess this one up. It’s buttery, sweet, moist and smells wholesome and comforting. It can be made with any fruit, I’ve had success with blueberries and adding rhubarb. Tinned fruit is completely acceptable in this recipe, and it can also be made the old fashioned way with a big bowl and a wooden spoon, which makes it so easy to whip up at the last moment. Ideal for afternoon tea or after dinner with a little custard and cream.
Apple Cake Recipe
125g butter (softened)
1/2 cup sugar
3/4 cup flour
3/4 self raising flour
1 tin of apple slices
Oven at 180C
Beat butter and sugar together until creamy
Beat in egg
Mix in flours, until just combined and resembles a dough like mixture
Divide the dough in half
Press out one half into a paper lined cake tin. Or you can roll it out if you prefer.
Spread the apples on top. (You can sprinkle with a little cinnamon and brown sugar if you like)
Press other half on top of apples.
Bake for about 35 minutes.
