VC came over tonight declaring she was going to start drinking more beer in an effort to try and enjoy it more, because let’s face it, beer is an acquired taste. Alongside the beer drinking VC also came to make her famous VFC (like KFC but without the Colonel). I wondered what else we could batter up and fry while we were at it, to which there was a swift and solid response from my young sister – ‘Onion Rings!’. I didn’t think it was possible, but our humble onion rings, made in the same manner as our fried chicken, were every bit as good as the all-hallowed Counter Burger onion rings. So once the onion rings were polished off we all sat down for a feast of juicy pieces of breast chicken deep fried in the lightest, crunchiest batter, dipped in honey-mustard mayonnaise. This meal is worth every single calorie.
This meal doesn’t really warrant a recipe or ingredient list it’s that simple. Simply half-fill a freezer bag with flour (1-2 cups) and add roughly – 2-3 tbs white pepper, 2 tbs salt, 1 tsp chicken stock powder or vegeta…adding paprika would also be nice. Dip pieces of chicken breast into some beaten egg and then roll in the seasoned flour and deep fry. White pepper cannot be substituted for black, so don’t even think about it.
For the honey-mustard dipping sauce, to about half a cup of whole egg mayonnaise and add 2 tbs of honey and 2 tbs American mustard. Stir. Simples.
