Stir Fried Hokkien Noodles with Chicken

Hokkien Noodles with Chicken Recipe

Ingredients:

Marinade:
1 tbs sugar
1 tbs light soy
1 tbs shao shing wine (or sherry can be used)
1/2 tsp sesame oil
400/500g chicken thigh fillets, sliced

Sauce:
2 tbs shao shing
1 tbs sugar
1 tbs light soy
1 tbs oyster sauce
1 tbs malt vinegar
1/2 tsp sesame oil

The Rest:
1 onion, sliced
1 tsp minced ginger
1 x 450g pk hokkien noodle
1/2 cup spring onion, sliced
1/2 red caps sliced
1/2 cup snow peas
1 carrot julienne

Method:
Marinade the chicken pieces for about half an hour.
Put the noodles in a bowl of hot water and separate them gently.
Fry the chicken pieces off in a hot wok in some peanut oil. Do in batches to prevent stewing.
Put meat aside and fry off the ginger and onion.
Throw in the other vegetables and stir fry for a minute or so.
Throw the chicken back in and stir, followed by noodles and sauce.
Fry off till everything is cooked to your taste and well combined.
