The Perfect Marinade

Leading up to Christmas, we are entertaining more often and having little parties here and there and this sauce makes the perfect party chicken wing. This sauce is sweet, sticky and addictive. Great for kids and adults, on anything from chicken wings to spare ribs. The robust, sweetness will go marvellously with lots of heat, so pile in the chilli for those who like it hot! Otherwise I have found that this recipe, above many others I have tried (years of trawling US sites, boiling up batches of coca cola marinade, you name it – I’ve tried it) provides the perfect mix of tang, sweet, sour and flavour.

It bakes to a delicious sticky texture, with just the right amount of burnished, crispness.

Sticky BBQ Sauce Recipe

Ingredients:

(Makes enough for about 1.5kg chicken wings or drummettes, or a couple of racks of ribs)

1 cup tomato sauce

1/2 cup plum sauce

1/4 cup Worcestershire

1/4 cup firmly packed brown sugar

2 cloves of garlic

2 tsp paprika

salt to season

(optional for more flavour, 1 tsp of celery salt, 1 tbs cayenne pepper)

Method:

Mix all the ingredients in a bowl and marinade meat for as long as possible.

Heat an oven to 180c, and lay the pieces flat on a baking tray. Don’t over-crowd or they’ll go soggy.
